I recommend the story because the author talks about how understanding the ratios of baking can free you from relying on recipes. For those of us looking for healthier ways to cook, understanding recipes better can help us make better judgements regarding subsitutions and cutbacks.

  1. I guess I am not a "normal cook" because I'll look at a recipe to get an idea of what goes in it, cooking times, etc and then set it aside and do what I want with the food. This sounds like an interesting book though I would be happy with the "2 pages" his instructor gave him!
