Sugar Free Sweet n Sour Sauce

Stumbled upon a way to make yummy sweet 'n' sour sauce that contains no sugar!

I hate to say I didn't write down exact amounts but I took half a small bottle of Pollaner All-Fruit Apricot Jam and simmered it with the juice from 1 18-oz can of pineapple (in its own juice variety, not in heavy syrup style)...reserving a 1/4 c of the juice for later. Save the pineapple to toss in the sauce later or to saute up with whatever you are making. Add approximately 1 tsp ground ginger (its to taste so feel free to add more or less) and 1/8 c to 1/4 c of white vinegar (again its to taste) and simmer until heated through. Mix 3 tbsp of cornstarch in the reserved pineapple juice and whisk until smooth....pour into heated mixture and stir until thickened.

You could add a few drops of soy sauce to the mixture but I didn't have any at the time. Very delicious on a saute of cubed skinless chicken breast and veggies. You can add the sauce to the pan once everything is cooked and toss to coat or just marinade your chicken in the sauce and then slide chicken onto skewers and grill.

Yum!

I also took the remaining jam and spread a thin coat on some ham I was grilling the next day. Super yum!

I think Pollaner's sugar free (All-Fruit) line also has a cherry jam that would be fun to try.
